Pumpkin Leaves Jack Seeds Curry

Ingredients :
pumpkin leaves 200 g
jack seeds 100 g
chopped onion 50g
chopped garlic 2 tsp
chopped green chilli 1 tsp
curry leaves 5
water cup 1
coconut milk 1 1/2 cup
curry powder 1 1/2 tsp
chilli powder 1 1/2 tsp
dried fenugreek seeds 1/4 tsp
chopped tomato 2 tbsp


Directions :
remove stem of pumpkin leaves and cut into small pieces. and cut jack seeds to small pieces and put into a pan. next add onion, garlic, green chilli, curry powder, chilli powder, fenugreek seeds, tomato, with water and cook about 10 minutes. then add coconut milk
and cook another 10 minutes under low fire.

Green Tomato Chutney Recipe

Ingredients :
1 kg green slice tomato
1/2 liter vinegar
250 g cooking apple
250 g sulthana
250 g light muscovado sugar
250 g chopped onion
salt to taste

Directions :
add sliced tomato, chopped onion, with solt into a large bowl and keep it about 12 hours. then peel and chop apple, chop also sulthana. then add sugar and vinegar into a large pan and boil it under low fir and stirring to dissolve the sugar. then strain tomato mixture using a colander and add to the sugar vinegar mixture and stir well. now simmer for 1 hour occasionally stirring for until thick and pulpy and remove from fire. then put mixture into a bottle and cover with lid.

Olives Pickle Recipe (Weralu Achcharu)

Ingredients :
50 rip green olives
1 tbsp chilli powder
1/4 tsp pepper powder
1 tbsp vinegar
2 tbsp tomato sauce
1 tsp chopped garlic
2 tbsp oil
5 curry leaves
1 tbsp sugar
salt to taste

Directions :
boil olives in salted water, then drain water and keep aside. next heat oil and add garlic and fry it to golden brown color. next add other ingredients and mix well for 1/2 minute, next add boiled olives and mix well.
this is a very faverit food of Sri Lankan Teens and Child.

Recipe for Sri Lankan Coconut Chutney

Ingredients :
1 cup  grated coconut
1/2 tbsp chopped green chilli
1 tbsp daria dal
1/2 tbsp chopped ginger
1/2 tsp mustard seeds
5 curry leaves
1 tsp chilli pieces
1/2 cup water
2 tbsp oil



 Directions :
add grated coconut, ginger, daria dal, green chilli,water and blend to make a fine paste and keep aside. next heat oil in to a pan and add mustard seeds, after fry it add curry leaves, chilli pieces and fry it for 1/2 minute, after fry it add coconut mixture and salt to taste, now stir well and cook for 5 minutes under low fire. next remove from fire and refrigerate and use as required.

Sri Lankan Ambarella Chutney Recipe

Ingredients :
15 medium size Ambarella
10 dried red chili (Without Seeds)
2 tbsp chipped garlic
1 tbsp chopped ginger
1 tsp pepper powder
1 inch cinnamon
4 cloves
500 g sugar
1 cup water

Directions :
first remove skin and seeds of ambarella. then add all ingredients (without sugar and salt) to a pan (non aluminum), and  cook all together stirring for 1 hours under low fire. (if have't inugh thick add water) then add sugar and salt, cook another 20 minute.

Sri Lankan Olives Curry Recipe (Weralu Maluwa)

Ingredients :
500 g Olives
1/2 tsp pepper powder
2 tsp chilli powder
2 tsp curry powder
5 curry leaves
3 cardamom
1 inch cinnamon
20 g chopped onion
30 g chopped tomato
3 tsp chopped garlic
1 tsp chopped ginger
3 tbsp oil
1/2 tsp mustard seeds
1 cup coconut milk
1/2 tsp turmeric powder
salt to taste

Directions :
first boil olives in a salted water and remove seeds and keep aside.
then heat oil in a pan and add mustard seeds, after fry it add ginger, garlic, onion and fry it for golden brown color. next add cardamom, cinnamon, curry leaves and mix well. then add tomato curry powder, chilli powder, pepper powder, turmeric powder and fry about 1 minutes under low fire. then add coconut milk and olives and mix well and cook for 5 minutes and low fire and add salt to taste.
