Umbalakada Sambola

Ingredients
100 g umbalakada (cut to little piece)
1 bottle vegetable oil
200 g large onions, finely chopped
30 g garlic finely chopped
20 g ginger finely chopped
100 g chilli with seeds
1/2 teaspoon turmeric powder
2 tablespoons salt
1/2 cup soya souse
10 g curry leaves
100 g freshly shredded coconut


Directions
fry shredded coconut to golden color
deep fry onion to golden color
now start cook, add 4 vegetable oil to fan than add ginger garlic, fry it to golden color, than add other all ingredients  mix  and cook 5 min

Bandakka maluwa (Lady finger Curry)

Ingredients
500 g lady fingers
200 ml coconut milk
200 g onions
100 g tomatoes
30 g green chillies
10 g turmeric powder
20 ml coconut oil
5 g cumin powder
5 g cinnamon sticks
10 g coriander powder
                                                      5 gm salt
                                                       5 g curry leaves


Preparation
Cut lady finger to 1 cm peaces, and chop tomato, green  chilies,
Mix littl turmeric powder and sald with lady finger, 
Heat oil and fry the lady fingers first. Assemble all the other ingredients together in a pot. Add oil and saute them together. Add half a cup of water and bring it to boil. Cook on a medium flame for 12 minutes.

Polos Maluwa (Green Jack fruit curry)

Ingredients:
600 g Polos
Coconut milk from one coconut
to tast salt
20 g of ginger
1 1/2 tsp fenugreek seeds
31/2 tsp chillie powder
1 tsp of turmeric powder
4 tsp curry powder
50 g onion chopped
2 pieces of goraka
3 cloves of garlic
1'' cinnamon



Method:
Peel polos and cut in to 1.5 inch pieces.
Add all ingredients together. Mix well and allow to sit for 15 minutes. Add coconut milk, mix well. Bring to boil and simmer till the polos is thick.(simmer for atleast 1 1/4 hour)

Check for salt and spices several times as the polos cooks and adjust accordingly. Also turn the polos occasionally to prevent burning.
Make it ahead of time and keep as it will help to absorb flavor well in to the polos pieces.

Aappa

Ingredients :
This is yeast mixture: 4 cups rice flour, 2 tsp yeast granules, 1 tb sp sugar, 1 1/3 oz can of coconut milk + 1/2 can of lukewarm water, 2/8 cup lukewarm water, 1 cup lukewarm water + 1 cup lukewarm beer, 3 t sp sugar, 1 tbsp oil, salt to taste


Method
Mix the ingredients for the yeast mixture and leave for 20 minutes until frothy. and put the rice flour into a large bowl and add the yeast mixture. Next add the 1 cup lukewarm water + 1 cup  lukewarm beer and Mix well. Finally before preparation add 3/4 of the (coconut milk with water) and 3 t sp sugar and stir well. If more  liquid is needed, add the remaining of the coconut milk little by little. The batter should be thinner and add salt to taste.When hot  rub the pan thoroughly with the oiled-cloth. Add about 1/4 cup of the batter to the pan and turn the  pan in a circular motion so that the batter sticks to the sides of the pan. finely cover and cook for about a 2 minute under low-medium heat. Use a  knife to loosen the edges of  the hopper and serve hot.

BEANS CURRY

INGREDIENTS:
250 g  Beans
one teaspoon of chilli powder
little amount of turmeric 
onions  50 g
green chillies, sliced 10 g
dill seeds (Little)
curry leaves 10g
salt 25 g
11/2 cup of thick coconut milk
1/2 big green tomato
chop Ginger Garlic


DIRECTIONS:
Cut beans into 1 ½ inch pieces, Put them into a pan. then add all ingredients. mix well and cook for 10 -12 minuets. 

SERVE:
Mainly goes with plain rice, but also you can have it with any kind of rice you like. And also you can try it with by other main dishes also.

Rulang Cake

ගෙදර කෑම ඉවීම සුලුකොට හිතන්න එපා අපිට නිවසේ අති විශේශම කාර්ය ආහාර පිසීම බව වටහා ගන්න ඔබට ගෙදර අයගේ සිත් දිනාගනීමට සුදුසු හොන්දම විදිය රසට ඉවීම බව නිතර සිහි තබාගන්න ඔයාලට රසට උයන්න ආස හිතෙන කෑම වට්ටොරු ගොඩාක් ඉදිරියේදි ඔයාලාට ලබදෙන්න බලාපොරොත්තුවෙනවා 

250 g rulang
250 sugar
100g butter, at room temperature
2 eggs
50g milk powder
50 cashew nuts, split in half
1 tsp baking powder
2 tsp vanilla essence
Water

First of all add rulang, half of the sugar, milk powder, baking powder and cashew nuts and mix it very well using a large spoon.
Then add the butter and the eggs one by one, add the vanilla essence and mix well.
Put the mixture into a tray, and bake at 200 c for about 25-30 minutes.


While the cake is in the oven, dissolve the other half of the sugar and 1 1/2 cup of water and make a syrup.
Let it cool. Put it into another tray and remove the oil paper.
Pour the syrup to the hot cake.
Serve after the cake has cooled.
