Chilli Sambal (Lunu Miris)

Ingredient :
10 Table Spoons chilli peaces
500g  Red Onions
Salt to taste
5 Table Spoons Lime Juice
10g Umbalakada peaces

Directions :
cut onions into small peaces,  add chilli peaces over the onions, add the lime Juice and salt. Blend all in to the required level. finally add Umbalakada peaces

Jack seeds Curry (Kos Ata Maluwa)

1/2Kg. Half boiled Jack seeds
10g chop red chilli
20g chop Onion
10g chop Ginger Garlic
2tbsp oil
8 curry leaves
2tsp Chilli powder
1tsp curry powder
salt to tast
2 cup coconut milk
1/2 Turmeric powder

heat oil in a pan and add ginger, garlic, onion and fry to golden brown color, than add curry leaves, red chilli, turmeric powder, salt, chilli powder, curry powder, and cocoanut milk, finely add boiled Jack seeds and cook 10 min

Garlic Curry (Sudulunu maluwa)

250g garlic
2 cup Coconut milk
50g chop onion
4 chop  Red Chilli
10 curry leaves
2tsp chilly powder
1tsp curry powder
salt to tast
1/4tsp turmeric powder
20g chop tomato
1/4 tsp mustard spoon

fist remove garlic skin, Fry the following in a tbsp of oil, mustard, Onion, Red chilli, curry leaves, tomato. than add salt, chilli powder, curry powder, coconut milk and Turmeric powder finely add Garlic and cook 10 min

Malu Cutlats (Fish Cutlats)

400g tin fish
2 tbsp ginger - garlic paste
2tbsp chop anion
2 egg
1 tsp pepper powder
1 tsp chilly powder
1 bunch coriander leaves
100g bread crumbs
3 chop green chillies
salt to taste
oil for frying
½ tsp turmeric powder
300g boiled potato

Direction :
remove boiled potato skin, mash it and fish with hand, than heat 3 tbsp oil and add ginger garlic and anion, fry to golden brown color, than add  chopped green chillies, salt, coriander leaves, chilly powder, pepper powder and finely fish and potato cook all for 3 min. mix all & make cutlets of round or any shape you like. Beat egg lightly. Dip cutlet in egg and roll them in bread crumbs. finally Heat oil. (Oil should be very hot), Fry till brown

Ala Baduma

250g  Potatoes
1/4 tl sp Turmeric powder
50g sliced Onion
Oil to fry
Chilly peaces
Curry leaves
Salt to tast
Umpalakada peaces

First Boil potatoes with salt and remove skin, cut potatoes to like 1 inch peaces, heat oil, add onion and salt fry to golden brown color, and add other ingredients and mix all, finely add potatoes and shake the pan from time to time cook 4 minuets.

Karavila Sambola (Bitter gourd Sambol)

150g Karavila (Bitter gourd/ bitter melon)
30g tomatoes
20g green chillie
30g onion
1 tsp sugar
1/2- lime

Cut the Karavila into 1/2cm  thick slices and deep fry till golden brown.
Slice the onion, tomato and add to a bowl. Next chop the green chilli and add to the bowl. Squeeze the lime juice and add salt and pepper to taste, Mix all and serve.

Kos Thambala

1/2 Kg of green Kos cut to 1/2 cm peaces
1/4 teaspoon of Turmeric powder
1/8 cup water
salt to taste
8 curry leaves
100g polsambola (Pol SAmbola Recipe -

In a large pan, Mix the Kos, turmric, salt and water. Close the pan and  cook until the jackfruit is tender and the water has evaporated.

after cooked add polsambola and mix well
