EGG RICE (BITHTHRA BATH)

Ingredients :
1kg rice
6 eggs
100g chopped onion
10g cinnamon
5 cardamom
2 clousde girofle
10 curry leaves
50g dried plums
20g cashew
chicken stock
salt to taste


Directions :
boil rice with chicken stock, then heat oil in another pan and add onion, fry it to golden color and next add other all  ingredients and fry about 1 minute, then add to the mixture eggs and mix well, finally add rice and mix well, then cook about 5 minute.

WATALAPPAN

Ingredients :
14 eggs
2cup coconut milk
170g sugar
500g jaggery (kithul hakuru)
30g chopped cashew
2tsp ground cardamom
1/4tsp salt
2cup water


Directions :
boil the jaggery with water in a pan to dissolve, and allow to cool it. next beat eggs well, then mix together milk, eggs, jaggery. cardamom, sugar, salt, vanilla and beat very well. strain this mixture through a fine strainer into a large a large bowl or into small bowls. and cover the bowl with oil paper, and steam about 1.20hrs. and let it cool in the container. finally sprinkle chopped cashews.

CHINESE CHILLI PASTE

Ingredients :
100g chilli pieces
1cup oil
100g dried prawns
30g chopped onion
5tbsp sugar
5 chopped curry leaves
1tsp lime juice
1tsp ajinomoto
salt to taste
1tsp chopped ginger
1tsp chopped garlic
1cup soya sauce


Directions :
heat oil and add onion,ginger, garlic, and fry to golden brown color, than add prawns and fry it to golden color and next add curry leaves and soya sauce. than add salt andd chilli pieces and ajinomoto, than mix well and cook about 3 minute on low fire. finally add sugar withing remove on fire and mix well

BANANA FLOWER MALLUM (KESEL MUWA MALLUMA)

Ingredients :
1 banana flower
1cup shredded cocoanut
10g copped garlic
20g chopped onion
2 chopped green chilli
1tbsp umbalakada
1tsp pepper powder
1/2tsp turmeric powder
salt to taste
1tsp lemon juice
1tbsp chilli pieces
2tbsp oil


Directions :
first chop banana flower into very small pieces. than grind in a bleander together cocoanut, garlic onion, green chilli. pepper powder, turmeric powder, salt, and chilli pieces. heat oil and add banana flower and frying about 5 minute. than add coconut mixture and umbalakada and fry about 5 minute, add lemon juice with remove on fire.

BANANA DRINK (KESEL BEEMA)

Ingredients :
banana drink
100 g banana
4tsp sugar
1tsp lemon juice
1cup ice cream
1/2 vanilla essence


Directions :
mix all ingredients in a blender, and process until smooth. than serve with ice cream or honey

WOOD APPLE DRINK (DIUL KIRI BEEMA)

Ingredients :
3 wood apple
10cups coconut milk
1/2 tsp salt
3/4cups sugar


Directions :
mix together all ingredients and grind in bender for dissolve. than keep in freeze about 30 minute, and serve with ice cream.

EGG COFFEE (BITHTHARA COFFEE)

Ingredients :
9 cup water
1 egg
1/4 cup water
1 cup cold water
1/2 cup coffee ground


Directions :
heat 9 cups water, and add 1/4cup water, coffee ground, egg and combine. next add the coffee mixture to the boiled water and boil about 3 minute. than remove from heat and mix cold water cup. now serve hot

ICE COFFEE

Ingredients : 
5 cup hot water
3tbsp coffee
8tbsp sugar
2tsp coco powder
5 cardamom seeds
1cm cinnamon
1/2 vanilla
3cup milk


directions :
mix together coffee, coco powder, with hot water dissolved, next add cardamon, cinnamon, vanilla and sugar finally add milk and mix well, than cool in freezer. and Shake well. Using a blender or milk shake maker before serve.

KANKUNG DEVIL

Ingredient : 
2tsp chopped ginger
2tsp chopped garlic
2tsp cilli peaces
2tbsp oil
3tbsp tomato sauce
4tbsp soya sauce
salt to taste
50g onion (cut to 1cm x 1cm)
30g chopped tomato
200g kankung (cut to 5 inches)


Directions :
heat oil in a pan and add ginger, garlic and fry to golden brown color, than add onion, and kankung and cook about 5 minute (keep green color in kankung), than add other all ingredients and mix well and cook 2 minute, row ready to serve.

FRIED OKRA CURRY (BANDAKKA MALUWA)

Ingredients :
500g Okra
50g chopped Onions
20g chopped Tomatoes
1tbsp Curry powder
1tsp chopped Ginger
1tsp chopped Garlic
oil for fry and kook
tbsp Chilli powder
Salt taste
2tbsp soya sauce
3cup coconut milk
ten curry leaves
1tsp turmeric powder


Directions :
sliced okra to 1/2cm peaces and Spread turmeric and salt, than put it about 15 minute.than fry to golden brown color.
than heat 3 tbsp oil and add ginger, garlic, onion,tomato, curry leaves, turmeric powder, soya sauce, Salt, Curry powder, and chilli powder. after 2 minute add coconut milk and mix well and kook for 10 minute finally add fried okra and kook about 5 minute.

TOMATO SANDWICH

Ingredients :
1loaf French bread (cut to 8 slices)
100g thickly sliced tomatoes
1tsp lemon juice
1/2tsp finely grated lemon zest
1/4tsp pepper powder
1/2tsp salt
1/3 cup mayonnaise


Directions :
stir well mayonnaise, salt, pepper, and lemon zest and juice in a large bowl. than Spread mayonnaise mixture on each slice of bread.and Arrange tomato slices on each bread slices.finally  cut each tomato sandwich in half to serve. now ready to serve.

BRINJAL PAHI (WAMBATU PAHIYA)

Ingredients :
100 g brinjal (Slice lengthwise)
1 peace cinnamon
2cup coconut milk
10 curry leaves
8g chopped ginger
8g chopped garlic
3 slice green chillies
1/2tsp mustard cream
40ml oil
10g slice onions
3 slice red chillies
15g salt
4tsp sugar
2tsp turmeric powder
1cup vinegar
10g tamarind
10g curry powder



Directions :
add water to a large bowl and mix salt and turmeric, than add slice brinjal and put it about 15 minute. than remove brinjal in water and fry to golden brown color, than mix coconut milk, vinegar, mustard cream with fried brinjal, than heat oil and add all other ingredients (without sugar) and fry about 2 minute, than add brinjal mixture and cook for 15 minutes,finally add sugar just before removing from the fire .

Mushroom tempered (Bimmal Baduma)

Ingredients :
100g sliced mushroom
30g sliced onion
20g chopped tomato
2tsp chopped ginger
2tsp chopped garlic
4 sliced green chillies
3tsp red chilli peaces
1/2tsp pepper powder
1tsp mustard seeds
10 curry leaves
1/2 curry powder
5tbsp oil
salt to taste
1/2 turmeric powder
1/4 cup water



Directions :
Heat oil and add mustard seeds, after fried add ginger garlic and onion and fry for golden brown color. than add tomato, green chilli, chilli peaces pepper, curry leaves, curry powder, turmeric powder, and mix all, than add mushroom and mix again after 2 minute add water and cook about 15 minutes.

GOTUKOLA SAMBAL (GOTUKOLA SAMBOLA)

Ingredients :
50g Gotukola
3tsp shredded coconut
2 green chilli (chop)
15g tomato (chop)
salt to taste
pepper to taste
15g onion (chop)
1/2 lime


Directions :
fist wash gotukola very well and chop it to very thinly, than put in a bowl and add coconut, green chilli, tomato, onion and mix everything well and finely add to taste lime, pepper and salt. now ready to serve.

FRIED FISH (MALU BADUMA)

Ingredient :
250g fresh fish fillets (cut into 1 x 1 cm peaces)
1 tsp garlic paste
½ cup water
½ tsp turmeric powder
½1 tbsp Goraka paste
1tsp pepper
oil
2tsp salt


Directions :
first mix goaraka paste, garlic paste, turmeric powder, pepper and salt with water, than coat each fish fillet in the goraka mixture, and season for 10 minute, finally deep fry till golden brown color

COCONUT ROTTI (POL ROTTI)

Ingredients :
500g of flour
1/2 a scraped coconut
50g margarine
2 1/2 tsp salt
water
5 chop curry leaves
2 chop onion
1/2 tsp chilli peaces
1/2 pepper powder
4 chop green chilli



Directions :
put scraped coconut and flour into large bowl, and add curry leaves, onion, chilli peaces, pepper, green chilli,salt and mix for a Minuit. than add margarine and mix about 2 minute, than  add water little by little and mix well until it makes a whole dough (This takes about 4 minutes). than make small balls and flat it on a board in hand, (make it thin using hand). finally heat nonstick pan (rotti  kabala) and add rotti on to it and born both sides about 3 minutes.

TIN FISH SAMBOL (SAMAN SAMBOLA)

Ingredients :
200g tin fish -(1 -container)
100g chop onion
20g chop tomato
3 chop green chilli
1/2 pepper powder
1/2 lemon juice
salt to taste



Directions :
mix tin fish, onion, tomato,  green chilli, and add pepper salt and lemon juice than mix and now ready to eat with Rice or Bread

LIME PICKLE (LUNU DEHI)

Ingredient :
20 Limes
 Salt to taste
100 g Sugar
1/2 1  cup Vinegar


Directions :
Pierce the limes using a fork and mix vinegar, sugar and salt  ( in a clay pot) and heat on a stove while stirring. when mixture begins to boil, add the limes, Continue to heat, turning the limes from time to time. than heat until the lime rinds discolor and shrink. and remove from heat and let it cool for awhile. Pour the mix into a preserve jar , for fill it to the top close lid tightly and leave about six months.
