BRINJAL MOJU RECIPE (BATU MOJU)

Ingredients :
500g Brinjal
80g Split green chilli
100g red onion
2tsp garlic paste
2tsp ginger paste
10 curry leaves
5tbsp sugar
5 chopped cloves
2 cup vinegar
salt to taste
2tsp chilli powder
2tsp turmeric powder
3tbsp mustard paste
oil for fry
2tbsp soya sauce


Directions :
slice Brinjal length wise (1cm x 3cm) and mix with turmeric powder and salt. then deep fry it until golden brown. and put it to drain oil.
heat 3tbsp oil in a large pan and add green chilli and red onion fry it to about 1 minute. then add garlic paste, ginger paste, clove, mustard paste, salt, curry leaves, chilli powder, soya sause, turmeric powder, sugar and vinegar. mix all and cook about 2 minutes. next add fried brinjal and mix well. serve it after 45 minutes.

HOW TO MAKE SOYA MEAT CUTLETS

Ingredients :
200g soya meats
100g boiled potato
2tsp soya sauce
50g chopped celery
1tsp pepper powder
salt to taste
oil for frying
50g flour


Directions :
cut potato to little peaces
soak soya meat in water about 2 hours and remove water and grind it. then add potato, celery, pepper powder, soya sauce and salt then mash all  together, and make little balls. then coat in flour. next deep fry it

CHICKEN NOODLES RECIPE (KUKULMAS NOODLES)

Ingredients :
400g noodles
100g grated chicken
2 beaten eggs
1tbsp chopped ginger
1tbsp chopped garlic
1tsp mustard seeds
5tbsp vegetable oil
1/2tsp turmeric powder
60g shredded leeks
60g shredded carrots
50g shredded cabbage
1tbsp soya sauce
1/2tsp pepper powder
salt to taste


Directions :
first of all boil noodles and remove from water. nexs heat oil in a large pan and add mustard seeds. after fry it add ginger and garlic fry it to golden brown color.then add chicken and fry it about 5 minutes and then egg and mix well about 3 minutes. next add all ingredients and cook about 3 minutes. then add noodles and cook another 3 minutes.

FRIED EGG NOODLES RECIPE (BITHTHARA NOODLES)

Ingredients :
400g noodles
3 beaten eggs
1tbsp chopped ginger
1tbsp chopped garlic
1tsp mustard seeds
5tbsp vegetable oil
1/2tsp turmeric powder
60g shredded leeks
60g shredded carrots
50g shredded cabbage
1tbsp soya sauce
1/2tsp pepper powder
salt to taste

PINEAPPLE DRINKS (ANNASI BEEMA)

Ingredients :
1 pineapple
5 cups ice cream
1/2 cup sugar
2tsp vanilla essence
2cups water
1/2tsp salt


Directions :
feel and cut pineapple into cubes. then put it into a bender and blend well, next add other all ingredients and blend again.keep in a refrigerator about 20 minutes before serve.

WATERMELON DRINK (PANIKOMADU BEEMA)

Ingredients :
500g seedless watermelon
2tbsp lime juice
50g sugar
5cups cold water
1cup ice cream


Directions :
put watermelon in a blender and blend it, then add other all ingredients and bled well. serve with ice cream.

CHICKPEAS TEMPERED (KADALA BITE)

Ingredients :
250g boiled chickpeas
50g sliced onion
10 curry leaves
3tbsp chopped ginger, garlic
2tbsp mustard seeds
3 -2tbsp chilli peaces
salt to taste
5tbsp oil
1/2 turmeric powder


Directions :
heat oil and add mustard seeds next add ginger, garlic, and curry leaves and fry for golden brown color. then add salt chilli peaces, turmeric powder and fry about 1 minute, next add chickpeas and mix well and cook for 5 minute under medium heat.

EGG KOTHTHU ROTTI (BITHTHRA KOTHTHU ROTTI)

Ingredients :
4 godhamba rotti
30g sliced leeks
30g grated carrot
2 beaten eggs
1/2cups chicken curry gravy
1tsp chopped ginger
1tsp chopped garlic
1/4tsp chilli peaces
2tsp soya sauce
4tbsp vegetable oil
1/4tsp pepper powder
salt to taste
5 curry leaves
2ch rampe (optional)
20g sliced onion
2 chopped green chilli



Directions :
cut godhamba rotti in to stripes of approx 1cm x 1/2cm. then heat oil in a frying pan and add ginger, garlic and onion then fry to golden brown color. next add curry leaves, rampe, tomato, carrot.leeks, onion and stir for 1 minute. then add beaten egg and soya sauce chilli peaces,pepper and and green chilli, stir well all and add chicken gravy and godamba rotti then add salt to taste and mix and kook for 2 minutes.

DRY SPRATS TEMPERED

Ingredients :
100g dry sprats
50g sliced onion
30g chopped tomato
2tsp Soya sauce
2tsp chilli pieces
salt to taste
5 cardamom seeds
5g cinnamon
5tbsp oil
10 curry leaves


Directions :
first remove sprats head and wash well several time.
heat oil and add together all ingredients and cook for 15 minutes

BEAN SEEDS CURRY (BONCHI ATA MALUWA)

Ingredients :
100g  bean seeds
2 cup coconut milk
2 cup water
20g chopped tomato
10 chopped curry leaves
1/2tsp turmeric powder
2tsp curry powder
1tsp chilli powder
10g chopped onion
1tsp chopped garlic
1/2tsp mustard seeds
3tsp oil
salt to taste

Directions :
heat oil and add mustard seeds, after fry it add garlic and onion fry it to golden brown color. then add tomato, curry leaves, curry powder, chilli powder, salt, and turmeric powder fry it about 1 minute and add water and mix well, then add bean seeds and cook for 10 minutes. next add coconut milk and cook another 5 minutes.

CARROT SAMBAL

Ingredients :
250g carrots
2tasp grated coconut
15g chopped onion
2 chopped green chilli
salt to taste
1/4tsp lime juice


Directions :
grate the carrot and mix together coconut, onion, green chilli and finale add lime juice.

POTATO DEVIL

Ingredients :
500g sliced potato
50g sliced tomato
4tbsp tomato sauce
2tsp pepper powder
2tsp chilli peaces
2tbsp soya sauce
salt to taste
2tsp sugar
five cardamom seeds
2tbsp chopped ginger, garlic
oil
50g sliced onion
50g sliced Banana Pepper
1tsp turmeric powder


Directions :
deep fry potato to golden brown color
next heat 6tspn oil and add ginger, garlic and fry to golden color, next add together all ingredients and mix well and cook about 3 minutes next add potato and cook another 1 minute.

MUKUNUWENNA MALLUMA

Ingredients :
200g mukunuwenna
1/2 cup grated coconut
2 chopped green chillies
20g chopped onion
1/2 tsp turmeric powder
salt to taste
10 chopped curry leaves
1/2 tsp lime juice


Directions :
cut mukunuwenna to small peaces (like grated coconut)
now mix together coconut, green chilli, onion, turmeric powder,curry leaves, salt and mukunuwenna. then mix well. next heat a pan and add the mukunuwenna mixture and tossing for a few minutes.

Ingredients :

50g chopped potatoes
1 juice of lime
5 chopped green chillies
1/4 tsp pepper powder

PAPAYA CURRY (GASLABU MALUWA)

Ingredients :
1 whole papaya (medium size)
1 1/2 cups grated coconut
1/2tsp chilli peaces
3tbsp oil
1tsp turmeric powder
1tsp mustard seeds
10 curry leaves
water
salt to taste


Directions :
first peel and chop papaya. next cook papaya with salt, turmeric and enough water.
blend coconut with water to make a medium thick gravy and mix with papaya and mix well and cook about  2 minute. then heat oil and add mustard seeds, curry leaves and chilli peaces fry about 1/2 minute and mix it to the papaya curry.

PUMPKIN CURRY (WATTAKKA MALUWA)

Ingredients :
500g pumpkin (wattakka), cut in to 1 inch? chunk
1 cup shredded coconut
1/2tsp pepper powder
1tsp chilli powder
1tsp curry powder
salt to taste
3tsp chopped onion
5 chopped green chilli
10 curry leaves
1/2tsp fenugreek seeds
1/2 1, inch piece of cinnamon
1/2 tsp turmeric powder
3tsp chopped garlic
2tsp of ground mustard seeds
3tbsp of raw rice
2cup water
2tbsp oil


Directions :
rice and coconut roast till golden brown color in a pan. and let cool. then heat oil and add onion, garlic, green chilli, curry leaves, fenugreek seeds, cinnamon, turmeric powder, and salt and pumpkin then fry 2 minutes, next grind rice coconut mixture in to a powder and dissolve in coconut milk. then add it to the pumpkin and mix well.now add ground mustard and cook about 10 minutes.

VEGETABLE SALAD (ELAWALU SALADA)

Ingredients :
50g carrot
50g cucumber
50g tomato
50g pineapple
50g cabbage
1tbsp vegetable oil
2tspn salt
1/2tsp pepper powder
2tsp sugar
1tsp lemon juice


Directions :
cut all vegetable to 1/2cm peaces
add oil to cup and add salt, pepper powder, and sugar, then mix it about 3 minute and mix with vegetable and add lemon juice and mix well

MANGO CURRY (AMBA MALUWA)

Ingredients :
4 Green Mangoes
cinnamon
cardamom
10 curry leaves
1tbsp curry powder
1tbsp chilli powder
20g chopped tomato
1tbsp chopped garlic
1/2tbsp chopped ginger
100g sugar
salt to taste
1/2 turmeric powder
2tbsp oil
2cup coconut milk
20g chopped onions


Directions :
cut each mango to 4 peaces.
heat oil and add ginger, garlic and onion. fry it to golden brown color then add cinnamon, cardamom, tomato,turmeric powder,green chilli, curry powder, and chilli powder. and fry it about 1 minute. next add mango and coconut milk. cook it about 30 minute and add sugar and cook another 10 minute.   

CARROT SAMBOL (CARROT SAMBOLA)

Ingredients :
200g carrot
1cup shredded coconut
20g chopped onion
4 chopped green chilli
salt to taste
2tsp lemon juice
1/4tsp turmeric powder
1tsp umbalakada peaces


Directions :
mix to coconut turmeric, salt, and mix well. then add onion, green chilli, umbalakada and carrot and lemon,then mix all together,

1 pineapple
cinnamon
cardamom
10 curry leaves
1tbsp curry powder
1tbsp chilli powder
20g chopped tomato
1tbsp chopped garlic
1/2tbsp chopped ginger
100g sugar
salt to taste
1/2 turmeric powder
2tbsp oil
2cup water
20g chopped onions


Directions :
cut pineapple to 2cm x 2cm peaces.
heat oil and ginger, garlic and onion. fry it to golden brown color then add cinnamon, cardamom, tomato,turmeric powder,green chilli, curry powder, and chilli powder. and fry it about 1 minute. next add pineapple and water. cook it about 30 minute and add sugar and cook another 10 minute.

TIN FISH CURRY (SAMAN MALUWA)


Ingredients :
400g tin fish
3 cup coconut milk
1tsp mustard seeds
20g chopped onion
20g chopped tomato
3 chopped green chilli
2 peaces goraka
10 curry leaves
curry powder
1/2 turmeric powder
1tsp pepper powder
2tsp chilli powder
salt to taste
2tsp chopped garlic
2tbsp oil
4 cardamom
cinnamon


Directions :
heat oil and add mustard then add garlic and onion, fry it to golden brown  color, then add tomato, curry leaves, green chilli, salt, cardamom and cinnamon next mix it well, then add turmeric, chilli powder, curry powder pepper powder and coconut milk and mix, cook it about 5 minutes, next add tin fish and cook about 5 minute.

SPRATS MALLUM (HALMASSO MALLUMA)

Ingredients :
150g headless sprats
1/2 shredded coconut
2tsp chopped garlic
20g shopped onion
10g chopped green chilli
5 curry leaves
3tbsp oil
salt to taste


Directions :
first wash sprats well and boil about 15 minute. then grind sprats well, and next add other all ingredient to the grind mixture and grind together all ingredients. finally heat oil and add sprats mixture and fry it about 5 minute.
